Behind the Drink
This is a luminous pre-Prohobition classic, first recorded in 1916 by Hugo Ensslin of New York's Hotel Wallick. A delicate blend of gin, maraschino liqueur, lemon juice, and crème de violette, it invokes the sky in both colour and spirit.
With its floral notes and crisp citrus balance, the Aviation soars with understated elegance.
Ingredients
- 50ml Tanqueray No.Ten
- 15ml Maraschino Liqueur
- 15ml Lemon Juice
- 10ml Crème de Violette
- 5ml Chilled Water
Build Method
- Add all ingredients to a shaker with ice, and shake for 5-10 seconds.
- Double strain into Coupe.
- Take a slice of Orange Peel and express the oils over the surface of the drink, and wipe around the rim. Use this to garnish.
